     Moroccan Brisket with Onions & Apricots

Ingredients
2 large onions, cut into wedges
2 teaspoons ground coriander (optional)
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
1 boneless beef brisket (about 3 pounds)
1 cup dried apricots
1 3/4 cups Swanson® Beef Stock
2 tablespoons honey
 

Instructions
Place the onions into a 6-quart slow cooker. Stir the coriander, if desired, cumin, cinnamon and garlic powder in a small bowl. Rub the mixture on the beef. Place the beef into the cooker. Arrange the apricots around the beef. Stir the stock and honey in a small bowl. Pour over the beef. Cover and cook on LOW for 7 to 8 hours or until the beef is fork-tender. Time-Saving- The recipe may also be cooked on HIGH for 4 to 5 hours.
