     Beef Stew

Ingredients
2 pounds beef stew meat
2 quarts water
5 onions quartered
8 carrots cut into 1in pieces
4 stalks celery cut into 1/2 in pieces
8 red potatoes (cut into hunks)
1 red bell pepper (hunks)
1 green bell pepper (hunks)
1 yellow bell pepper (hunks)
 
1 tbs paprika
1/2 number 10 can (3 1/4 pounds) tomatoes
3 tbs ketchup
2 tsp salt
1 tsp sugar
1 tsp pepper
ROUX-
3/4 cup cornstarch
1 cup water

Instructions
Put meat, water, onions, carrots, celery in large pot. Cook for one hour. Add all other ingredients, Cook until meat and potatoes are tender. About one more hour. After stew is done cooking, add roux for thickening.
Make a roux using cornstarch and COLD water. Heat water over medium high heat. Add cornstarch slowly whisking vigoursly. When mixture thins and starts to bubble, reduce heat to low and cut back on whisking. Cook 2 more minutes, stirring occasionally.
