     Mexican Layered Casserole

Ingredients
3 cups sliced onions (3-4 onions)
2 1/2 cups thinly sliced zucchini (4-5 medium zucchini)
1 3/4 cups julienned sliced red bell peppers (3 peppers)
2 cloves large garlic minced
1 cup corn
1 tsp cumin
1/4 tsp red pepper flakes
2 15oz cans black beans (drained)
1/4 cup water
 
5 8 in flour tortillas
1 1/1 cup (6oz) monterey jack cheese

Instructions
Use cuisinart to slice onions, zucchini, peppers. Set aside. Puree beans with water in cuisinart. Set aside. Saute onions, zucchini, peppers, and garlic, then add corn, cumin, red pepper flakes. Cook 2 minutes.
Spray a 3qt round souffle dish with cooking spray. Place 1 tortilla in bottom of dish, and 1/4 bean mixture, 1/4 sauted vegetables, cheese, and sauce. Repeat for next 4 layers. Bake at 350 for 45 minutes. Can freeze well uncooked.
