     German Potato Salad

Ingredients
6 large potatoes (4 lbs)
3 slices bacon
3 stalks celery, chopped
1 medium onion (finely chopped)
1/2 cup chopped green bell peppers
1 dash red pimento
1 dash parsley
DRESSING
1 1/2 tbs cornstarch
 
3/4 cup sugar
3/4 cup vinegar
3/4 water
1 egg yolk
dash salt and pepper

Instructions
SALAD- boil potatoes in large pot of water til tender. Cook 10 minutes then remove skin. Cool completely. Chop potatoes into bite sized pieces. Add celery onion and green pepper. Fry bacon. Remove bacon and set aside.
Dressing- to bacon grease, add cornstarch and brown slightly. Add sugar, vinegar, and water. Boil and stir until thick like gravy. Remove from heat and add beaten egg yolk, stirring quickly so not to lump. Add salt, pepper, and pour dressing over potatoes. Add crumbled bacon and parsley and pimento. Cool completely.
