Broccoli, baby carrots and cauliflower, blanched for 4 minutes
|

or 2 (16 oz) pkgs of frozen Californai blend vegetables, thawed
|

8 oz Velveeta cheese, cubed
|
|
6 tbsp butter, divided
|
|
1/2 c crushed Ritz crackers
|
|

Instructions |

|
Blanch fresh vegetables for 4 minutes or prepare frozen vegetables according to pkge.
|
|
|
In small saucepan, combine 4 tbsps butter and cheese. Cook and stir over low heat until melted.
|
|
|
Pour cheese over vegetables and stir to coat. Tranfer into greased baking dish.
|
|
|
Melt 2 tbsps of butter and combine with cracker crumbs. Sprinkle over the top. Bake, uncovered, at 325 for 20-25 minutes.
