     TCs Chicken & Dressing

Ingredients
Whole Chicken cut-up
Chicken broth
Cornbread
Biscuits
1 cup chopped celery
1 cup chopped onion
1 stick butter
1/2 tsp Salt
1/2 tsp Pepper
 
1 Tbls Poultry seasoning

Instructions
Prepare cornbread and 1 can store bought biscuits at least 2 days ahead of time. Allow to dry out and crumble together.
Wash and cover skin on chicken with cold water, salt to taste. Bring to a boil then simmer 45 minutes to 1 hour until tender. Allow to cool in broth. Remove skin and bones and discard. Skim broth.
Microwave celery and onions with 1 stick butter until tender. Add to bread mixture. Toss well. Add salt, pepper, and poultry seasoning to taste. Pour broth over bread mixture and mix well. May need to add more canned chicken broth. Should be very wet. Taste and add more seasonings if necessary.
Mix in chicken or place on top. Lightly cover with foil. Bake at 325 degrees for 1 hour.
