Ingredients
1 whole wheat pizza dough from Trader Joe's
Extra virgin olive oil
1 medium onion, diced
Salt and pepper
1/4 teaspoon crushed red pepper flake
1 ten-ounce package of frozen chopped spinach, thawed
8 large eggs
2 tablespoons cream or half-n-half or milk
1/2 cup shredded cheddar cheese
 

Instructions
Preheat oven to 450. Follow directions on pizza dough package for preparing 12-inch round pie. Place rolled out dough on cookie sheet lined with parchment paper and drizzle with EVOO. Bake for 8-10 minutes until light brown. Set aside.
Preheat 2 tablespoons EVOO in a skillet over medium heat. Add onions and season with salt, pepper and chili flakes. Saute until the onions are softened and translucent, about 5-7 minutes. Crumble in the thawed spinach and saute another minute or two until the spinach is warmed through. Transfer to a bowl and put skillet back on the stove, reducing the heat to medium low.
Whisk the eggs together with the cream and season with salt and pepper. Stir in the onion and spinach mixture until well combined. Add mixture to skillet and scramble slowly until the eggs are just set, about 5-7 minutes.
To assemble the pizza- cover the pizza dough with the scrambled egg mixture. Sprinkle the cheddar cheese on top and bake at 450 for 2-3 minutes until the cheese is melted and golden brown.
Serving Suggestions
1-2 slices per person; serve with fresh fruit
