     Vietnamese Beef Noodle Soup

Ingredients
1 small onion, chopped
2 inch stick ginger
2 litre beef broth
6 star anise
1 tsp. salt
1 tsp. sugar
1 lb. very tender beef
16 ounce package of dry flat rice noodles
Garnish-
 
bean sprouts
sprigs of fresh basil
cilantro
lime or lemon quarters
fish sauce
hoisin sauce
hot chile sauce

Instructions
Broil onion and ginger until they look burned. Use cleaver, smash ginger.
Add browned onion and ginger to beef broth, star anise, salt and pepper. Over medium-low heat, simmer for 30 minutes.
Soak noodles in cold water for 10 minutes. Drain. Cook noodles in freshly boiled water for 7 seven. Drain. Do not over cook.
Strain out browned onion and ginger from broth. Return broth to boiling point. Add raw tender beef and noodles. Cook for a few minutes. Serve immediately with bean sprouts, basil, cilantro, hoisin, hot chile and fish sauce.
