3 to 4 pounds chicken breasts, shrimp, and/or smoked sausage
1/2 cup oil
2 cups chopped onions
1 cup chopped celery
1/2 cup chopped green bell peppers
1 to 2 gloves of garlic minced
6 to 8 cups water
3 cups raw rice
3 tbls chopped green onions
2 tbls parsley
salt and pepper to taste
Instructions
If using chicken and/or sausage brown in 1/2 cup oil. Add chopped onions, celery, bell pepper, and garlic. Cook until tender.
Add water, rice, green onions, and parsley. Salt and pepper to taste. Simmer in covered pot for 1 hour. If using shrimp add them about 15 minutes before end of cooking time.
Can spice this up with red pepper or cayenne. My version has a milder flavor.
