     Sweet Potato Side

Ingredients
2 Small Sweet Potatoes
2 Tbl Chopped Pecans or Walnuts
1 1/2 cup apple cider
2 tsp butter
1/8 tsp ground cinnamon
1/8 tsp salt
 

Instructions
Preheat oven 400. Pierce cleaned sweet potatoes with fork. Bake poatoes on baking sheet with parchment paper. Do not wrap in foil. Bake until tender 50-60 minutes.
While potatoes are baking spread chopped pecans in small baking pan. toast in over 5-8 minutes. Place apple cider in small skillet. Bring to a simmer. Cook over med. heat until syrupy and reduced to 1/4 cup, 15 to 20 minutes. Do not scortch. Stir butter, cinnamon and salt into reduced apple cider mixture.
When sweet potatoes are ready, cut in half lengthwise. Score the cut side with a paring knife. Spoon 1 Tbl apple cider mixture over each sweet potato half and sprinke with 1/2 Tbl. toasted nuts.
Makes 4 servings and 208 calories per serving.
