3/4 cup Poppy seed dressing (could use blue cheese)
Four (6 oz.) boneless skinless chicken breasts
Salt and black pepper
1/2 teaspoon paprika
3 tablespoons olive oil, divided
1 large Granny Smith apple, cored and sliced (or your favorite apple)
1 cup sliced celery (Optional)
1/3 cup sliced Vidalia onions (or your favorite onion)
8 ounces clean baby spinach leaves
1/4 cup sliced or diced Almond nuts (or pine nuts)
Instructions
Season chicken with salt, pepper and paprika.
A-Heat 2 tablespoons of oil in skillet over medium
heat and sear both sides of chicken
B-Continue to cook on medium heat until chicken is
thoroughly cooked ( about 20 minutes depending on
thickness of Chicken).
C-Transfer to a plate and keep warm
A- In same skillet, heat remaining oil and sauté
apples and shallots until tender.
B- Gently heat Poppy seed dressing in a saucepan. Do
not bring to a boil
Arrange spinach on plates, top with vegetables,
apples, and chicken. Spoon warm Poppy seed dressing
over all and sprinkle with almonds nuts.
