     Ham and Beans

Ingredients
1 lb dry Benas
1/2 lb cooked ham (cut into bites)
1 onion (diced)
1/2 cup brown Sugar
Salt and pepper to taste
1/4 ts Creole Seasoning
1 tb. Dried parsley
 

Instructions
NIGHT BEFORE- Rinse beans and discard shriveled beans. In large pot add beans 8 cups of cold water. Let stand over night.
Drain and rinse beans. return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne, and parsley. Add water.
Bring beans to a biol. Then reduce to simmer and cook for 1 1/2 to 2 hours.
