     Goat Cheese & Sundried Tomato Stuffed Chicken Roll

Ingredients
4 skinless, boneles chicken breasts, sliced into 8
1/2 tub of Goat cheese crumbles
1/4 cup sundried tomatoes, thinly sliced
1/2 Tbsp chopped fresh thyme
1 Tbsp olive oil (can use oil from canned sundried tomatoes)
Toothpicks to secure
 

Instructions
Set bbq to medium high and oil grill.
Place breasts on cutting board. Divide cheese, sundried tomatoes, and thyme evenly over chicken. Roll and fold ends snugly toward the centre of each breast and secure with toothpick.
Lightly brush with oil and grill. Close lid and cook until chicken is firm and cooked through, about 20 - 25 minutes. Turn as needed to brown evenly on all sides. Season with salt and pepper.
