     Lemon Poppy Seed Muffins

Ingredients
3 c. all purpose flour
1 T. baking powder
1/2 t. baking soda
1/4 c. poppy seeds
1 1/2 sticks unsalted butter softened
1 c. sugar
1 1/2 c. plain yogurt
2 T. fresh grated lemon rind
1/2 c. crushed blueberies
 
3 T. lemon juice
1 1/2 c. powdered sugar

Instructions
Pre heat the oven to 375 degrees Sift together, the flour, baking powder and baking soda, add the poppy seeds and salt. Whisk. In a mixer or a large bowl, cream the butter and sugar together until fluffy. Add the eggs one at a time until incorporated and then add the lemon zest.
Beat the dry and wet ingredients, including the yogurt and blueberries, alternately in thirds until incorporated and just moistened. Fill 12 prepared (sprayed) muffin cups and bake for 25-30 minuted.
Dust with a little leftover poppy seeds and enjoy!!! Let rest for 10 minutes and spread a thick layer of glaze on each.
