     Cheese Souffle

Ingredients
6 tbsp butter
6 tbsp all purpose flour
1/2 tsp salt
1/4 tsp white pepper
1 3/4 milk
6 eggs, seperated at room temp
1 1/4cups shredded Swiss cheese
1/4 tsp cream of tartar
1/4 tsp dry mustard
 

Instructions
Melt butter. Blend in flour, salt, pepper, mustard; cook, stirring constantly, until bubbly. Stir in milk; continue cooking and stirring until mixture thickens and bubbles for 1 min. Beat egg yolks lightly in small bowl; sppon a few tbsp of the hot sauce into yolks, blend well.
Slowly pour yolk mixture into sauce in pan. Stir constantly w/ wire whisk until well blended. Remove from heat. Cool slightly; stir in cheese. Beat egg whites w cream of tartar in lg bowl just until they form firm peaks. Scoop 1/4 of the beaten whites from side of bowl and fold into cheese sauce to lighten. Slowly pour cheese sauce into space left in egg-white bowl. Fold in cheese sauce until no streaks of white or yellow remain. Pour into lightly buttered 8 cup souffle dish.
Make deep circle 1 inch from edgew tip of spatula. Place in preheated hot oven (400). Immediately reduce to moderate (375). bake 35 mins until golden and puffed and center jiggles only slightly when shaken. Serve at once.
