Sprinkle pork butt heavily with salt, pepper, and garlic powder. Put into a pot with high sides. Sprinkle chopped onion and apple under and on top of the pork, and pour vinegar over the top. Cover tightly or seal with heavy duty foil and cook in 300 degree oven for 5 hours.

Remove pork from oven and lift it out of the pan. Pork will be falling apart. Remove bone and large pieces of fat. and put meat into shallow roasting pan, pulling the pork into large pieces. Sprinkle with salt to taste.

Take pork juice with apples and onions in it and skim off the grease. Put juice in a sauce pan and boil down to half of the original volume. Use immersion blender to make sauce smooth or strain out onion and apple bits if you prefer- or just leave them in.

Put pan of pork pieces in 400 degree oven and roast for 1/2 hour, moistening with the sauce and turning pieces of meat over so it gets a bit crispy. If you like, smoke the pork in a barbecue grill for 45 minutes instead, with soaked wood chips wrapped in foil place over the front burner on medium and the pan of meat place in the back of the grill with the lid closed.

Chop meat. Serve with buns and your favorite barbecue sauce, Baby Rays or East Carolina Sauce is great.
