     Jewish Apple Cake

Ingredients
4 med Golden Delicious Apples
2 tsp Cinnamon
2 C Sugar
3 C sifted Flour
1/2 tsp Salt
1 tsp Vanilla
4 tsp Sugar
4 Eggs
1 C Oil (plus 1 Tbsp)
 
3 tsp Baking Powder
1/2 C Orange Juice
Instructions
(1) Beat Eggs thick; (2) gradually beat in Sugar; (3) add Oil; (4) resift Flour with Baking Powder and Salt; (5) add to beaten egg mixture alternately with additions of Orange Juice; (6) beat in Vanilla; (7) mix in Apples; (8) sprinkle with 1/3 Sugar/Cinnamon mixture.
Grease and flour a 9inch tube pan, quarter, core, peal and slice apples. In separate bowl, mix 4 tsp Sugar and 2 tsp Cinnamon. Bake 1 hr at 350.
