     wjjjww coconut chickpea curry

Ingredients
1 tablespoon olive oil
1 tablespoon curry powder or curry spice blend
1 small onion sliced thinly
1 can diced tomatoes
1 can chickpeas (garbanzo beans) drained and rinsed
2 big handfuls fresh spinach, chopped
1 can coconut milk
 

Instructions
heat oil in large skillet. cook curry powder over med low heat for about 5 minutes. add onion and cook for another 5 minutes, until onion is soft and sweet.
add canned tomatoes. add garbanzo beans. cook for 10 minutes or so. stir in spinach and cook until wilted.
add coconut milk and simmer until thickened. salt and pepper to taste.
serve over thai kitchen (thai yellow curry) rice or other rice of your choice. pita or naan on the side is great! top with cilantro and a squeeze of lime juice for an extra kick.
