|
heat oil in large skillet. cook curry powder over med low heat for about 5 minutes. add onion and cook for another 5 minutes, until onion is soft and sweet.

add canned tomatoes. add garbanzo beans. cook for 10 minutes or so. stir in spinach and cook until wilted.

|
|
add coconut milk and simmer until thickened.
salt and pepper to taste.
|
|
|
serve over thai kitchen (thai yellow curry) rice or other rice of your choice. pita or naan on the side is great!
top with cilantro and a squeeze of lime juice for an extra kick.
