     Beef Brisket

Ingredients
3-4 lbs brisket
1 1/2 tsp salt
1/4 tsp black pepper
3 Large onions sliced thin
1 bay leaf crushed
4 whole allspice
flour
1 T chopped parsley
 

Instructions
trim fat. place beef in heavy saucepan over moderate heat. let brown on all sides, seasoning with salt and pepper. remove beef. pour off all fat from pan and add sliced onions. lay beef over them. add bay leaf and allspice. cover and simmer 1 hour.
turn brisket over and simmer 2 hours longer, basting occasionally. remove meat to platter. strain liquid, measure it and return to pot. blend flour(1 1/3 T to each cup broth) with as little cold water as possible. stir into broth. bring to a boil and add any seasoning. lower heat, replace beef in gravy and simmer 1 hour. garnish with parsley.
