5 medium cooked and mashed carrots

3/4 C. sugar

1/2 C. shortening

1/2 C. butter or margarine, softened

1/2 t. salt

3/4 C. flaked coconut

Instructions |

|
|
Mix carrots, sugar, shortening, butter and eggs.
|
|
|
|
Stir in flour, baking powder and salt. Add coconut.
|

Drop dough by tsp. onto ungreased cookie sheet.
|

|
|
Bake 8 minutes at 400. Frost with icing when cool.
