Ingredients
2 T. oil or bacon drippings
1 Lb. pork butt, trimmed and cut into 3/4-inch cubes
2 large onions-chopped
8 garlic cloves, minced
2 C. dried pasole-soaked over night
8 C. of chicken stock, or more if needed
2 t. dried oregano
2 t. salt
2 bay leaves
 
1 t. dried thyme
Red chile sauce, to taste

Instructions
Brown pork, onions and garlic in oil in a large stock pot. Add pasole, stock,and spices. Bring mix to a boil, reduce heat and simmer for an hour. Add red chile and continue simmering for another 1- 1 1/2 hours, or until pasole is puffed and tender but still a little chewy.
