Bring 2 cups milk and rice to boil over medium heat, stirring constantly. Reduce heat to low. Cover and cook about 15 minutes or until rice is tender. Remove from heat and stir in butter until melted. Cover and set aside.

Beat eggs well adding sugar gradually. Stir in 2 cups of milk and vanilla. Stir in rice mix. Pour into a greased 10 x 6 baking dish.

Bake at 325 degrees for 30 minutes. Remove from oven and stir well. Sprinkle with cinnamon and bake another 15 to 20 minutes until knife inserted in center comes out clean.

Serve warm with cream or milk. If desired, omit cinnamon and serve with fruit or chocolate sauce.
