6-8 large potatoes, peeled, cooked and mashed and still hot

1 C. sour cream
|

2 t. salt
|
|
1/4 t. pepper
|
|
2 T. chopped onion
|
|
1/4 C. (half stick) butter or margarine

1 (10 oz.) pkg. frozen chopped spinach, thawed
|
|
1 (2 0z.) jar sliced pimentos
|
|
1/4 grated cheese
|

Instructions |

|
In large bowl, combine potatoes, sour cream, salt, pepper, onion, butter, spinach and pimentos.
|

Spoon into greased 2 quart casserole.
|
|
|
Bake uncovered at 400 for 15 minutes. Sprinkle with cheese, bake 5 more minutes.
