Ingredients
50g Egg whites
15g Sugar
60g Almond meal
100g Powdered Sugar
6 ounces Bakers Chocolate
1/2 cup Cream
 

Instructions
Beat egg whites with sugar until stiff peaks.
Add sifted almond meal and powdered sugar by thirds folding into egg whites until smooth lava texture.
Pipe onto aluminum baking sheets with silpats then bake for 12 minutes at 290F but watch closely because they could be done sooner!
Melt the chocolate and incorporate the cream. Then spoon between two cookies.
