     Chocolate Mint Truffles

Ingredients
1.75 cups milk chocolate chips
1 cup semi-sweet chocolate chips
0.75 cup heavy whipping cream
1 tbsp pepperment extract
1.5 cups finely chopped nuts
 

Instructions
Line baking sheet with wax paper. Place chips in large mixer bowl. Heat cream to a gentle bowl and pour over chips. Let stand for 1 minute, stir until smooth. Stir in pepperment extract. Cover with plastic wrap and refrigerate for 35-45 minutes or until slightly thickened. Stir just until color lightens slightly. (Do not over mix or truffles will be grainy)
Drop by rounded teaspoon onto baking sheet and refrigerate for 10-15 minutes. Shape into balls, roll in nuts. Store in airtight container in refrigerator.
