Cook spanish rice according to package.
Heat oil and saute peppers and garlic until tender, about 5 minutes.
Add black beans and salsa - heat for 5 minutes.
Spray casserole pan (9x13), cover bottom with cooked rice, add bean mixture on top. Placed sliced avocados on top of beans, place the rest of the rice over the avocados.
Finish with adding the cheese on top.
Bake at 350 degrees until cheese melts.
