     Mint Meringue Cookies

Ingredients
2 egg whites (large or 3 medium)
Dash salt
½ teaspoon cream of tartar
¾ cup sugar
Green food coloring
1-12 oz. package mint chocolate chips
 

Instructions
Beat whites, salt, cream of tartar. Add sugar gradually, beat until stiff. Add coloring, use mixer to blend. Fold in chips. Place by teaspoonful on waxed, paper-lined cookie sheet. Place in preheated 350 degree oven, turn off oven. Leave for 4 hours or overnight. Makes 36.
