     Macaroni and Cheese

3 tbsp butter
3 tbsp flour
2 cups warm milk
1-1/2 lb uncooked elbow macaroni
1 lb sharp Cheddar cheese, shredded
1 lb Monterey Jack cheese, shredded

In a small saucepan melt butter. Add flour and whisk together to create a roux. Add milk and whisk until smooth and slightly thickened. Add 3/4 cup of each of the cheeses and mix to combine. Pour cheese over macaroni. Mix will and place in a large casserole dish and top with remaining cheese. Bake at 350 for 20 minutes.
