     Ginger-Chicken Noodle Soup

Ingredients
1 Pound Boneless,Skinless Chicken Thighs
2 Medium Carrots, Shredded
2 Tbsp Dry Sherry
1 Tbsp Soy Sauce
1 Tbsp Rice Vinegar
1 Tsp Fresh Ginger or 1/2 Tsp Ground Ginger
1/4 Tsp Black Pepper
3 14 Oz. Cans of Chicken Broth
1 Cup Water
 
2 Oz Dried Rice Noodles
1 16 Oz. Package Frozen Pea pods

Instructions
In a crockpot, combine chicken, carrots, sherry, Soy sauce, rice vinegar,ginger, and pepper. Stir in chicken broth and water.Cover and cook on HIGH setting 2-3 hours.
Stir in noodles and pea pods. Cover and cook for 5 to 8 minutes more or until noodles are tender. Serve with additional soy sauce.
