     Salad Nicoise with Seared Tuna

Ingredients
2 garlic cloves, minced
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
1/2 lemon, juiced
2 tablespoons chopped fresh flat-leaf parsley
sea salt & freshly ground black pepper
1/2 cup extra-virgin olive oil
1 pound small red potatoes, scrubbed & halved
8 large eggs
 
1/2 pound French green beans, stems trimmed
2 pounds fresh sushi-quality tuna
2 tablespoons extra-virgin olive oil
sea salt & freshly ground black pepper
1 pint cherry tomatoes, halved
1 cup nicoise olvies
1/2 bunch fresh chives, snipped in 1/2

Instructions
To make the vinaigrette- combine all ingredients in a jar. Shake the vinaigrette. Set dressing aside.
Cooking the potatoes, eggs, & green beans in the same pot. Put potatoes in large saucepan, add water to cover & a pinch of salt; bring to a boil over medium heat. Simmer potatoes for 12 mins, then add eggs. Place a steamer basket/colander on top of simmering water. Put green beans in steamer & cover with lid. Steam beans for 5 mins until crisp-tender; while continuing to cook potatoes until fork tender. Drain out water & put potatoes, eggs, & green beans in a colander; rinse briefly under cold water. Peel shells off eggs & cuts them in 1/2 lengthwise.
Place a large skillet over medium-high heat. Rub tuna on all sides with olive oil & a bit of the vinaigrette; season with salt & pepper. Lay tuna in hot pan & sear for approximately 2 minutes on each side. Transfer tuna to cutting board & slice.
To assemble the salad, combine potatoes, green beans, tomatoes, olives, & chives in a large bowl. Take the vinaigrette & give another shake. Drizzle salad with enough vinaigrette to fully moisten & toss gently to coat; season with salt & pepper. Drizzle with remaining vinaigrette & serve!
