     Mexican Cornbread

Ingredients
1 cup corn meal
1/2 teaspoon baking soda
3/4 teaspoon salt
1 cup milk
2 eggs
1/2 cup bacon drippings
1 can cream corn
1 large onion
2 garlic cloves
 
1 jalapeno pepper
1 cup grated cheddar cheese (reserve some for topping)
1 greased dish (glass casserole, cast iron skillet, etc.)

Instructions
Finely chop garlic, onions and jalapeno.
Combine all ingredients together.
Pour into greased pan.
Bake 1 hour at 350 degrees.
Serving Suggestions
Top with reserved cheese.
