     Terry's King Ranch Chicken

Ingredients
3 - 4 pounds chicken breasts and thighs (boiled, skinned and deboned)
2 cans cream of chicken and mushroom soup
1 can (approx. 15 oz) of either tomato sauce, crushed tomatoes, or Ro-Tel tomatoes, crushed
1 cup sour cream
1 teaspoon garlic salt
1 teaspoon instant coffee
1 teaspoon soy sauce
1 teaspoon seasoned salt
1 onion, chopped
 
1 bell pepper, chopped
12 - 14 corn tortillas, torn
1/2 pound Velveeta, diced
1 cup grated cheddar cheese

Instructions
Heat Velveeta and tomatoes (or tomato sauce) in microwave until cheese is melted.
Saute onion and bell pepper. Mix everything except tortillas in a large bowl.
Place half of tortilla pieces in greased Pyrex baking dish. Pour chicken mixture on top. Sprinkle remaining tortilla pieces on top.
Bake at 350 degrees for about 30 minutes. Uncover and sprinkle cheddar cheese on top. Bake for an additional 10 - 15 minutes.
