     Quiche - Filling

Ingredients
1/2 pound crumbled bacon, fried until crisp or 1 cup cooked ham
1 cup grated Swiss cheese
1/4 cup chopped bell pepper
1/4 cup chopped onion
4 eggs
3/4 cup milk
2 tablespoons melted butter
3/4 cup heavy cream
1 tablespoon flour
 
Pinch of salt
Pinch of cayenne pepper
Pinch of nutmeg

Instructions
Scatter bacon (or ham), cheese, bell pepper and onion over the bottom of the uncooked quiche pastry.
Whisk together eggs, milk, butter, cream, flour, salt, cayenne pepper and nutmeg and pour over quiche filling.
Bake 40 minutes, until the custard is firm.
Let cool 15 minutes before cutting.
