     Cottage Cheese, Onion, Dill Bread

Ingredients
3 tablespoons yeast
3 tablespoons honey
1 cup warm water
3 cups cottage cheese
1 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
3 large eggs
1/2 package dry onion soup mix
 
1/2 cup fresh dill (3 tablespoons dry dill)
1 teaspoon pepper
2 cups whole wheat flour
5 - 6 cups unbleached flour

Instructions
Add yeast and honey to warm water. Stir until dissolved.
In a large bowl combined cottage cheese, salt, soda, butter, eggs, soup mix, dill and pepper. Mix well. Add the yeast mixture and whole wheat flour. Mix well. Add the remaining flour, 2 cups at a time to make a stiff dough.
Turn onto a lightly floured surface and knead thoroughly until dough is smooth and elastic. Place dough in a clean bowl, cover and let rise until doubled. Turn onto a lightly floured surface and knead lightly. Divide dough and shape into loaves.
Place in 3 or 4 buttered loaf pans. Cover with plastic wrap coated with non-stick cooking spray and let rise until doubled. Bake in a preheated 350 degree oven for about 40 - 50 minutes.
Serving Suggestions
This is a wonderfully light, savory bread that makes 2 very large loaves or 3 - 4 regular ones.
