     Shrimp Ceviche - Isla Mujeres

Ingredients
1 pound shrimp, deveined and shelled
1 2/3 cups lime juice (about 5 large limes)
1 small onion (white)
3 roma tomatoes
1 tsp. cilantro
1 jalapeno
1 Tbsp. EVOO
 

Instructions
In a medium bowl, toss the shrimp and 1 cup of the lime juice. Cover and Refrigerate for at least 2 hours, or until shrimp are cooked
In another bowl, add the chopped tomatoes, onion, cilantro, and jalapeno. Add the EVOO, salt and pepper (to taste)
Add the shrimp. Serve with corn torilla chips.
