1 container Cool Whip (thawed)... or you can make old fashioned whipped cream
1 cup sweetened flaked coconut
1/2 cup finely chopped toasted pecans
Instructions
Prepare and bake cake as directed in a 9 x 13 pan.
While baking, cook the pineapple, juice, and sugar over medium heat until thick and syrupy. About 15-20 minutes.
When cake is done, pierce it all over with a fork and pour the pineapple mixture over the top.
Mix the instant vanilla pudding with the milk and pour over the pineapple layer.
Mix the coconut and pecans into the Cool Whip and frost. I like to sprinkle a little extra chopped pecans on top. Chill the cake for a few hours... and be sure to store it in the refrigerator should there be leftovers.
