     Twice- Baked Potato Casserole

Ingredients
6-8 slices of bacon
2 cartons (20 oz) simply Mashed Potato (I use garlic flavored)
1/2 c. butter ( 1 stick)
1 c. ( 8 oz) sour cream
1/2 c. whole milk or cream
2 c. (8 oz) shredded chedder cheese
4 gree onions sliced, including tops
 

Instructions
Heat oven to 350 degrees, Coat 13 x 9 baking dish wit non stick spray.
Fry bacon ( I used real bacon bits before also) this will just reduce this step). chop and crumble bacon when cool.
Heat mashed potatos according to pkg directions. Combine potatoes and butter in large mixing bowl. Add sour cream and milk, stir to blend. Add 1 cup shredded cheese and most of bacon. (reserve about 3 TBSP); stir to mix. Transfer mixture to baking dish and top with remaing cheese. Bake 30 min or until heated through.
Let stand 5 or 10 minutes. Sprinkle with green onions and reserved bacon before serving.
