     chicken enchiladas

16 oz can tomatoes, coarsely chopped
4 oz can chopped green chilies
1/2 tsp coriander
1/2 tsp salt
1 C sour cream
2 C finely chopped cooked chicken
3 oz softened cream cheese
1/4 C finely chopped onion
12 flour tortillas
1 C shredded monterey jack cheese

blend tomatoes, chili peppers, coriander and salt. add sour cream and set aside. mix chicken, cream cheese, onion and 3/4 tsp salt. cook tortillas a few seconds on each side. spread chicken mixture on tortillas, roll up. place in baking dish. pour tomato mixture on top. cover with foil and bake 30 minutes at 350. remove foil and cover with cheese, heat until cheese melts.
