Ingredients
3 Envelopes gelatin powder, unsweetened
5 tablespoons artificial sweetener -- splenda
3 Egg Whites
2 teaspoons Vanilla Extract
1/4 Cup cold water
3/4 Cup boiling water
 

Instructions
Sprinkle gelatin over cold water in a mixing bowl. Set aside for 5 minutes to soften. Add to the boiling water in a saucepan and cook and stir until gelatin is dissolved. Remove from heat. Cool to consistency of thick syrup. Beat egg whites until soft peaks form.
Very slowly trickle a small stream of gelatin into the egg whites, beating until the gelatin is all mixed in. Continue beating until light and fluffy (but not until they are dry). Pour into pan, allow to cool and then cut into desired size!
