Sprinkle lamb chops with one-quarter teaspoon (1 mL) of the salt, and all the pepper. Preheat broiler to hot and broil chops 5 minutes a side or until desired degree of doneness. Meanwhile, in a small microwave bowl, combine onions, water and vinegar; microwave on high for 30 seconds. Stir in remaining salt, and the vinegar, lemon juice, olive oil and mustard, blending well. Stir in parsley, tarragon, mint and
pimento. Serve over hot lamb.
