     Tofu Salad with Sesame Dressing

Ingredients
10 ounces (300 g) firm tofu
4 cups (1 L) mixed salad leaves
----For the sesame sauce---
1 cup (250 mL) toasted sesame seeds
½ cup (125 mL) soy sauce
1/3 cup (75 mL) superfine sugar
For the sesame dressing
4 tablespoons (60 mL) sesame sauce (see above)
2 tablespoons (30 mL) unseasoned rice vinegar
 
2 tablespoons (30 mL) finely chopped leeks, washed and dried
2 teaspoons (10 mL) grated fresh ginger

Instructions
For the tofu, drain it well to keep it from being watery. With the dressing prepared in advance, the salad takes minutes to assemble at the last minute.
To make the sesame sauce- Grind toasted sesame seeds with a mortar and pestle or spice grinder until sticky. Add soy sauce and sugar and combine. Drain the tofu. Cut in half horizontally, then into 4, making 8 squares in all. To make the sesame dressing- Mix sesame sauce and rice vinegar in a small bowl. Add chopped leeks and ginger and stir to combine. Place tofu on a serving plate, pour over the sesame dressing and top with salad leaves. Serve.
