     Eggplant Parmigiana

Ingredients
Panko Bread Crumbs
3 egg whites
1/2 cup parmesean cheese
Salt (to taste)
Pepper (to taste)
2 lbs Eggplant
Mozzarella
Spaghetti
Marinara Sauce - Homemade or Canned
 

Instructions
Preheat oven to 400 degrees. Combine bread crumbs, parmesean, salt and pepper in a small bowl. Combine three egg whites in seperate bowl. Peel and slice the eggplant into 1/2 inch slices.
Dip the eggplant slices into the egg white and then coat with bread crumb mixture. Place on greased baking sheet. Bake the slices 15 minutes per side.
Prepare homemade marinara sauce if applicable. When the eggplant is finished layer the largest slices onto the bottom of a 9X13 pan. Top this layer with marinara sauce and mozzarella cheese. Repeat this step until all ingredients are used.
Bake in the oven for 10-15 minutes or until the cheese is melted and lightly browned.
