     Creamy Bacon Baked Potato Soup

Ingredients
4 med potatoes, cubed to about 1/2 inch, peeling left on
8 strips of thick bacon, chopped and fried
1 stalk celery, finely chopped
1 large carrot, finely chopped
1/2 med. onion, finely chopped
5 c. chicken broth
1c. whole milk or heavy cream (more if you like)
1/2 t. cayenne pepper
salt and pepper to taste
 
green onions
cheddar cheese
sour cream

Instructions
Chop and fry the bacon and remove from pan. Pour off all but about 1 T. of the grease. Add in celery, carrot and onion and saute until onion is translucent (NOT brown!).
In a stock pot, pour in chicken broth, cayenne pepper, potatoes and some salt and pepper. Add cooked veggies. Boil for 10-15 min. or until potatoes are tender.
Add in milk and simmer another 5 min. Reseason with salt and pepper to taste.
Ladle into bowls and top with cheese, sour cream and green onions. (Like you would top a baked potato!)
Serving Suggestions
You can substitute sausage or ham for the bacon.
