Cream butter, sugar, egg yolks and vanilla. Mix flour and salt and stir into creamed mixture. Chill dough.

Roll the dough out and make into balls. Dip in slightly beaten egg whites and roll in your choice of coconut or nuts. Place on baking sheet and press thumb into center of each cookie.

|
Bake in 350 F oven for 10-12 minutes. Wait to cool.

|
Fill cooled cookies with your choice of jam or jelly or tinted confectioners sugar icing.

Add 2-oz melted unsweetend chocolate to dough and fill centers with chocolate icing for a chocolate variation.
