Preheat oven to 350 & grease a loaf pan.
Combine sugar & shortening & beat well.
Add eggs, one at a time, beating well after each.
Beat batter until light.
Add mashed banana and stir.

Sift dry ingredients 3 times, stir into batter,
beating until smooth. (Yes, sift dry ingred. 3
times, believe me it is worth this little bit of
extra effort.) Add chopped walnuts.

Pour into greased loaf pan and bake 60-70 min.
I used a light colored loaf pan and cooked for
53 min. & it was done! So bake with care. Cool
in pan, then turn onto rack to cool.

|
This bread slices nicely when warm. It can be
stored in refrig or freezer.
