     Candied Nut Carrots and Yams

Ingredients
2 Sweet potatoes, peeled and diced into 1/4 inch cubes
5 large carrots, peeled and cut into coins
1/2 cup chopped pecans
1/4 cup chopped cashews
3 tbsp of sugar
3 tbsp water
1 tsp nutmeg
1 tsp Cinnamon
1 tsp salt
 

Instructions
Fill large cooking pot 1/2 way with water add potatoes and carrots, turn on high heat and cover. Let boil for 10 min. then check potatoes with a fork to check for softness. When potatoes are soft they are done.
While the potatoes and carrots are cooking- In a small sauce pan add 3 tbsp of sugar and 3 tbsp of water. Stir to dissolve the sugar, add the nuts and spices then bring to a simmer. Simmer 5-7 minutes. You want them to be golden and coated. It is very easy to forget about them and have them burn, trust me! If the syrup is looking too runny, keep them on the stove. You want them to be coated and crunchy.
Transfer cooked potatoes and carrots into a casserole dish and top with the candied nuts.
