     Asparagus Soup

Ingredients
1lb young asparagus cut into 1in pieces
3tbsp butter
6 Shallots (or 3 small onions) sliced
2 Sticks of celery cut into 1in pieces
1 lg potato or 2 small
2 1/2 cups vegetable stock or water
1tbsp lemon juice
1 cup milk
1/2 cup single cream
 
4 tbsp chopped fresh chervil or cilantro
salt and freshly ground black pepper
2 TBSP Garlic
1/4 TSP Nutmeg

Instructions
Remove tops of asparagus and quickly fry in a little butter (2-3 min), then reserve for garnish. Melt butter in pot, add onions, garlic, celery and asparagus. Cover and sweat for 10-15 minutes at med-low temperature.
Add vegetable stock and potato and simmer 30-45 minutes.
Add chervil/cilantro, milk and cream and simmer 5 to 10 minutes. Add lemon juice, nutmeg, season with salt and pepper then puree with an immersion blender until large pieces are gone.
Serve with asparagus tops as garnish.
