     Chicken Tortilla Soup

Ingredients
2 Tbsp Oil or Butter
3/4 C Celery, diced
1-1/2 Tbsp Garlic, fresh, minced
3 C Chicken, cooked, diced
(2) 14-1/2 oz. cans whole tomatoes, coarsely chopped
1/4 C Fresh Lime Juice
1 Tbsp Fresh Basil, minced
Salt & Pepper
1 C Onions, diced
 
1/2 C Bell Peppers, diced
8 C Chicken stock (4 cans)
1 sm can Rotel, mild
1/4 C Cilantro, minced
1/2 tsp Cumin, ground
Grated Jack Cheese

Instructions
Boil chicken until done with a little poultry seasoning. Heat oil or butter in a large soup pot. Saute chopped onions, peppers, celery and garlic for 15 minutes (or until soft). Add chicken stock and remaining ingredients. Simmer for 30 minutes. Salt and pepper to taste. Garnish with tortilla chips and grated cheese.
