     Chevre and Garlic Bread Salad

Ingredients
5 inches of french bread
1 clove garlic, halved
2 medium tomatoes, cored and diced
4 oz chevre into small bite-sized chunks
1/4 C chopped basil leaves
1 T white wine vinegar
1/4 t salt
1/4 t pepper
3 T EVOO
 

Instructions
Cut bread lengthwise. Rub with garlic. Toast in broiler. Cool. Cut into bite-sized pieces. Add tomatoes, basil, and chevre.
In a smallw bowl, whisk vinegar, salt, pepper, and oil. Pour over bread mixture and toss.
Consider adding arugula? baby romaine?
