12-14 oz of rice noodles (sometimes called rice sticks - mine are from TJs
1/4 cup lime juice
1/4 cup fish sauce
3 tablespoons soy sauce
2 tablespoons sugar
4 tablespoons vegetable oil
1 lb of broccolini or broccoli, cut into small, easy to stir-fry pieces
4 eggs, beaten
1 onion, thinly sliced
1 1/4 lb ground turkey or ground chicken
1/4 cup chopped green onions
Instructions
Soak rice noodles in a bowl of very warm water.
Allow to soak for 20 minutes until noodles are
pliable. Drain and set aside. (You'll need about
this much time to prep your ingredients so don't
worry.)
Mix together lime juice, fish sauce, soy sauce and
sugar. Stir until sugar dissolves. Set aside.
Heat a fry pan over medium heat. Add 2 tablespoons
of vegetable oil and add broccoli or broccolini
and stir fry, until crisp tender, about 5 minutes.
Drizzle over two or three spoons of lime juice-soy
sauce mixture and stir fry for another 2 minutes.
Remove pan from heat, and scoop broccoli out into
a plate. Pour any remaining juices over the top.
Heat 1 tablespoon of oil over medium high heat and
cook eggs until they are all firmed up, about 3
minutes. The eggs can just be cooked just like
scrambled eggs. (optional) Remove from pan.
Heat 1 tablespoon of oil over medium high heat and
then add thinly sliced onion and cook, stirring
often until onions are golden brown, about 5
minutes. Add turkey mixture, cooking, adding more
oil if necessary, breaking up the meat with the
spoon into small chunks. Pour over remaining lime
juice-fish sauce mixture and cook for 1 minute, to
concentrate the flavors. Add noodles and cook,
further softening the noodles. It may be necessary
to add some oil and more water if the noodles do
not soften up enough. Add oil sparingly (if you
don't like your food too greasy) and add water
about 1/2 cup at a time. Continue cooking and then
to finish, add the cooked broccoli, egg, and green
onions. Toss together.
